Last weekend while enjoying an afternoon of good food and good conversation in my backyard with friends and family, it hit me. It’s the simple things in life that make me happy. Although I am neither rich nor famous, I feel like I am very fortunate. Life has been good to me, and I want to show my gratitude by spreading the happy.
A simple backyard cookout for friends and family is the perfect way to spread a little happy. I have yet to have someone turn down an invitation to eat my chicken, pineapple and red pepper kabobs. They are so tasty. Here’s how you make them:
Teriyaki Chicken, Pineapple and Red Pepper Kabobs
ingredients:
3-4 boneless-skinless chicken breasts, cubed
1 cup teriyaki sauce
1 can pineapple chunks
1 large red bell pepper, cut into chunks
directions:
If using wooden skewers, be sure to soak them in water for about 30 minutes before prep time. Place chicken and teriyaki in a zippered bag or bowl with a tight fitting lid, into the refrigerator for about an hour to marinate. You can marinate overnight if you like, but do it for at least an hour for best flavor. Once the chicken is ready, simply place the chicken, pineapple chunks and red pepper pieces alternately onto skewers. Then, grill until chicken is grilled throughout. It’s that easy!
Serve this up with your favorite macaroni salad or potato salad for the perfect summer meal.

Cinnamon Toast with Nutella. This dessert is oh-so simple. Purchased a loaf of thinly sliced French bread, and brush on some melted butter. Next, sprinkle on a little sugar and cinnamon. Then bake it off in a 350 degree oven for a few minutes until the bread is nice and crispy.
Serve the crispy cinnamon bread with Nutella. I love how simple yet delicious this is!
