I made some marshmallow cream and it was so wonderfully delicious that I have since been dreaming up different ways that I can use it. Dolloped atop a bowl of ice cream with chocolate syrup it is simply perfection, yet I found myself still wanting to do more with it. I realize red velvet whoopie pies are already plastered all over the internet and Pinterest, but with Valentine’s Day just weeks away… I still had to do it. You can’t have enough whoopie pies!

I doctored up a box cake mix a bit for this recipe, but it’s the homemade marshmallow cream that really makes it special. I absolutely love semi-homemade recipes. As a busy mom, they make my life so much easier. It’s amazing what you can do with a box cake mix. Here are some examples:

devil’s food cake mix
instant chocolate pudding
water
vegetable oil
eggs
red gel food coloring
marshmallow cream (Here’s my recipe for Homemade Marshmallow Cream.)
How to Make Red Velvet Whoopie Pies
Preheat oven to 350 degrees. Line baking sheets with parchment paper or lightly grease.
In a large mixing bowl, beat first five ingredients on low speed just until moistened. Gradually add and mix in red food coloring, until you’ve achieved a deep red color.
Using a 1/4 cup measure, drop batter onto cookie sheets, approximately 2 inches apart.
Bake 13 to 15 minutes or until set. Allow to cool on cookie sheets for a few minutes, then transfer to cooling racks. Cool completely.
Dollop about 2 tablespoons of marshmallow creme onto the flat side of one cookie, being careful not to overfill. Place another cookie on top of creme, bottom side down.

- 1 4 oz box instant chocolate pudding
- 1/2 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 1 tbsp red gel food coloring
- 1 cup marshmallow creme
