Try to think beyond the sandwich when it comes to school lunch ideas. When I was a kid, sandwiches were a lunchbox staple. Jelly and cheese were my fav with bologna coming in a close second. My 9-year old isn’t as impressed with the sandwich as I was.
To keep things interesting, swap out that sandwich for a cheese quesadilla. Even better, make it a pepperoni and mozzarella pizza quesadilla. Or simply add a little leftover chopped chicken to your child’s favorite cheese.
Sandwich pinwheels are always a hit. Hard boiled eggs are also a great addition to school lunches.
I sneak as many fruits and veggies as I can into school lunches. To make things easy on myself, I wash and prep all the veggies the same day I do my shopping. That way everything is ready to go when I’m packing T’s lunchbox.
